Let's Chat! School Lunches and a Free Printable!
This year I have a senior in high school (!), a freshman, and a 6th grader. By now, we have done the back-to-school organizing and routine changes quite a few times, and most things continue to get easier and easier. LOVE that! And over the years, I have shared quite a few of the things we do to prep, but this year I realized I haven't really posted about school lunches. So today is the day because they are a huge part of our daily life!
A few things I want to mention right off of the bat; lunch and food is a personal parenting decision that I never judge and hope that we can definitely keep this conversation helpful and encouraging. There have been times that I have felt bad that I wasn't making bear shaped sandwiches for my boys, and I definitely have my kids eat school-prepared lunches as well. That shouldn't make me feel bad and I know that now. We all do the best we can for our kids, period. I know that some people truly enjoy making art out of food, that some kids are vegetarian, have food allergies, only eat organic, or don't do sugar. This post isn't about that, it's just a few really quick and simple tips for how I handle the lunch prep/making process around here. So let's dive in.
TIP #1
The first thing I did this year is sit down with my boys and figure out what each of them enjoys most. My biggest problems leading into this year have been over-purchasing foods, trying to over-cater to their specific taste buds, then ending up in a hamster wheel of packing the same things on repeat with very little variety.
So, I sat with the boys and asked them what their favorite foods are, and wrote down all of the items that they could all agree on. We took some time to look for quick ideas online together to come up with 15-20 different lunch options as well as a variety of quick and tasty sides.
You know me, I couldn't miss an opportunity to whip up a free printable for you all, and I am SO glad I did. I made it editable so that we could type in all of our lunch ideas (which are broken down into categories: main course, fruits/veggies, sides/desserts), and then print it off and keep it inside of our pantry with our shopping/meal planning items. You can also just save it filled in digitally and access it from your phone or computer.

Now when I am grocery shopping/meal planning for the week, I can glance at their list and be sure to stock up accordingly. This list has items they will all eat, so I can now quickly put together lunch ideas without over purchasing food while offering some variety from week to week.
TIP #2
Keep it simple! One of the primary goals is to be speedy about lunch making. Whether in the morning or the night before, I don't want to have to invest much time in putting everything together. And really, the best case scenario is that I give the boys the tools they need to be able to do everything themselves.
So, that might mean giving into some pre-packaged items or creating my own quick snack packs that we can all just grab-n-go. Typically I portion off crackers, popcorn, fruits, veggies, protein bites, etc... Whenever I can, I select fruits and veggies that I know I will get the longest life from (I have found that grapes, carrots, celery, cucumbers, pea pods, oranges, peppers, melon, and apples will typically stay fresh throughout the course of the week without concern of spoiling, and are easy to portion out). This is HUGELY important and probably my biggest tip.
I will also purchase individual meat snacks, cheeses, nuts, yogurts, granola, etc... if the price is right for the time I am willing to invest. If I have more time on a given week, I might opt to purchase in bulk and create those portions myself.
TIP #3
OK, so basically the first step was to select the simple sides that can easily be tossed into a lunch, and next, I like to do a little prep. Again, I am putting groceries away anyway, why not just put them away in individual grab-n-go packages to make the entire week go smoother?
Aside from the fast fruits and veggies mentioned above, we all really love berries as well. So, while putting groceries away and doing my weekly meal prep I will soak/rinse them in a bowl of water and vinegar for a couple of minutes. They seem to last longest if I do a quick soak and then let them air dry before refrigerating. This is one more step, but if I multitask during other meal prep, then it isn't too bad and I know I will prolong the freshness for a few extra days. I do this with all berries, not just strawberries.
Also fresh from the grocery store, I will cook up chicken to create grilled chicken strips that I will put in wraps, tacos, on salad, etc... And every couple of weeks I will freeze sandwiches in a few varieties in bulk.
I recently switched to these wax paper bags because they are compostable and keep the sandwiches fresh in the freezer. I will make a few loaves of bread worth of sandwiches at a time (I will also use rolls/croissants with meats/cheeses, etc...) and I find they work best if I don't use spreads other than peanut butter and jelly directly on the bread. I will put together a few sandwich varieties to select from, and just label the sandwich type on the wax paper bag.
The bulk sandwiches go into freezer zipper bags (which I just keep reusing) and into the freezer until a school morning when they are transferred directly to the lunchbox and they are ready to eat by lunch.
All of the pre-prepped snacks and sides are put together in a section of the fridge that the boy's love to grab from.
TIP #4
If you have the space for it, I recommend storing all lunch related containers together. That way everything is quick and easy to pick from during the lunch making sessions.
We have a nice deep drawer in our pantry and it holds all of the lunch boxes/bags, containers, water bottles, thermos, reusable bags, etc.... It has become a pretty popular drawer!
TIP #5
Tip five isn't as much of a tip as it is just some of our favorite lunch products.
We have done bento-type containers and boxes in the past, but now that the boys are bigger, they have outgrown many of those. We prefer containers that will hold a full-size sandwich or wrap without having to turn it into bite-sized finger food.
These sandwich boxes are our new favorite and I appreciate that they are dishwasher safe! They can hold the main course as well as two adequately sized side items. They are also really handy for sending snacks to school to get the boys by between classes and their extracurricular activities.
With all of the fruits/veggies/sides, and my quest to eliminate our use of plastic sandwich bags, I invested in some reusable options and so far I have been really happy with them.
I went with both the snack and sandwich sizes and they are great for keeping a variety of snacks ready to go and fresh in the fridge, and the rest stay on hand for the dry goods. They can be washed in the dishwasher, but I usually just wash them out with this dish brush in an attempt to prolong their number of uses even more.
Above you can also see the containers I am smitten with for dressings and condiments. They are typically used for baby food storage, but they are completely leak proof and durable and reusable so we give them major thumbs up for lunch boxes.
An insulated food jar is also high on our list because it allows us to really expand on what we send to school. We can quickly heat up items in the morning, pop them in the insulated Thermos and everything stays nice and warm until lunchtime (think leftovers, rice, pasta, soup, etc...).
An insulated Thermos can also keep items cold, but we don't find ourselves using it for that purpose as often (but love that we can if we would like to). We do have these ice packs on constant rotation to help with keeping items fresh and cool for the few hours they are packed up.
As you can see in the lunch drawer above, we also have a few airtight snap containers that work well for bulkier items and salads (similar). In general, I looked for containers and products that can be reused, are durable, and are dishwasher safe, all of which keep our day-to-day process running quickly and smoothly.
Finally, these fridge bins (similar) rank so high on our list, they are wonderful for corralling all of the individual servings of our lunch and snack sides and act like a deep drawer in the fridge.

Tacos are a favorite at our house but eating them every week can get boring.
But taking those same flavors and cooking them in a new way can break the boring dinner cycle.
But you still get to enjoy your favorite flavors together in an easy dinner recipe.
Easy Taco Pie Quiche Recipe…I love easy to make dinners and this easy taco pie recipe is simple to make. You brown everything in a pan, dump eggs over top and bake.
Leaving you time to work on other things, like making a salad, while dinner bakes.
If you and your family love tacos as much as we do, I’m sure you will love this recipe.
It’s easy to make with just 7 ingredients and half of those are seasonings too.
Ingredients Needed to Make this Easy Taco Pie- Ground Beef
- Onion
- Pepper
- Eggs
- Garlic
- Cumin
- Chili Powder
You’ll also need salt and pepper for this dish but I think most people have those two seasonings on hand so I don’t regularly list them.
You could add salsa and shredded lettuce to the list along with cheese and sour cream.
All of those items would be great to top the taco pie quiche with once it’s done baking.
We served ours with salsa and add a side salad instead of putting the lettuce on top.
Prep Ahead for Less Stress at DinnertimeI also love this recipe because you can prep the ingredients ahead of time.
When you are doing your meal prep for the week or earlier in the day when you have a little more time, you can chop the vegetables and get them ready.
You could even brown the meat too.
To prep ahead early in the week…
Chop the vegetables and place them into a container or zipper bags, be sure to label which dinner these go to.
Have the ground beef waiting to be cooked the day of or you could combine the vegetables with the ground beef and cook them on your prep day.
This meat and vegetable combination could be doubled and you could use half in a nice pasta sauce for spaghetti and meat sauce for a second dinner.
Giving you two meals prepped at the same time. Yay!
Just leave out the seasonings until you are ready to make dinner that night. Otherwise, you’ll end up with taco spaghetti, which might not be too bad.
To Prep the Day of…
You can chop the vegetables and place them in a bowl with the seasonings on top.
Have your ground beef or ground turkey waiting in the refrigerator.
Then when it’s time to make dinner start browning the ground beef in the pan, drain off any fat when it’s half cooked through.
Then add the vegetables and seasoning and cook until the meat is no longer pink.
Or if you have the time you could prep the vegetables and cook the meat early in the day and place it in your baking pan and cover.
Any of these prepping options above can help you avoid the dinnertime crunch with unhappy kids and the stress of trying to get dinner done.
How to Make this Easy Taco Pie RecipeA few tips to help you make this easy low carb taco pie recipe for dinner or breakfast.
Place your ground beef in the skillet and cook until halfway cooked through. Drain off any liquid or fat.
I find draining the fat away while there is still juice in the pan makes it so much easier to get most of the fat drained away.
Once the meat is cooked halfway, add the vegetables and seasonings. Cook until the meat is no longer pink and cooked through.
Add the meat with the bit of fat that might remain to a casserole dish. I used my pyrex 9-inch square pan.
Place the eggs into a bowl and whip with a whisk to blend them. You can add salt and pepper to the eggs if you wish.
Pour the eggs over the ground beef and vegetable mixture in the pan.
Cover with a lid or foil and bake for 25 minutes, then uncover and bake another 15 minutes or until the eggs are set and cooked through.

- ¾ pound Ground Beef
- ¾ cup Onion, chopped
- ¾ cup Green Pepper, chopped
- 1 Garlic Clove, minced
- 6 Eggs
- ½ teaspoon Cumin
- ½ teaspoon Chili Powder
- ½ teaspoon Salt
- ¼ teaspoon Pepper
- Preheat oven to 350 degrees
- In a skillet brown the ground beef until halfway cooked through, drain off fat and liquid.
- Add the onion, green pepper, garlic, cumin, chili powder, salt, and pepper to the meat. Continue to cook until the ground beef is no longer pink and cooked through.
- Place the meat and vegetable mixture into a square 9-inch casserole dish.
- Place eggs into a bowl and whip with a whisk to combine.
- Pour eggs over the meat mixture and cover with a lid or foil.
- Bake for 25 minutes, then uncover the casserole dish and bake for another 15 minutes, until eggs and set and cooked through.
- Serve with cheese and sour cream on top if desired with a salad to make a complete meal.
Variations for this Taco Pie Recipe
It’s nice to use up what you have on hand. Use these variations to try with this recipe.
If you have leftover rice, mix it with a little taco seasoning and then add it to the ground beef. Then pour the eggs over top.
If you don’t have ground beef, you can use ground chicken, turkey or even ground pork.
Don’t have green peppers, leave them out or try another vegetable you have on hand, something like celery would be a good substitution.
Make it vegetarian by using meat-free crumbles instead of the ground beef.
This recipe is written to be dairy free but if you like you can stir in shredded cheese into the eggs before baking or sprinkle it on top after adding the eggs.
Leftovers heat well the next day and could be used for breakfast or an easy lunch.
For something a little different to use up leftovers…
Crumble the reheated taco pie and sprinkle on top of a bed of lettuce, dress with salsa and a few crushed tortilla chips to the top, or use the ones at the bottom of the chip bag.
Sprinkle with cheese if you need not eat dairy free. This makes an easy salad for lunch.
Cost of this Easy Taco Pie Recipe…Eggs $.60 for 6, purchased at $1.25 a dozen
Ground Beef $2.24 at $2.99 per pound
Green Pepper, $.80 for one whole pepper
Onion $.19 purchased at $1.50 for 3 pounds
Garlic, $.10 purchased at $1 per head of garlic
Seasonings $.15 purchased in bulk spices
That brings the total for this recipe to $4.08 for 6 servings. Or just $.68 a serving. Add a side salad for a complete dinner for about $1 a serving for each person.
It’s great when you can feed your family a healthy dinner for around a dollar a serving.
Our Experience with This Recipe…I made this recipe for our family for dinner the first time I made it.
I have a picky eater, well I have to say I have a picky eater compared to the rest of our family but he is still a good eater.
When my picky eater saw this dinner, he ate everything else on his plate. When he finally had to try it, since it was the only thing left on his plate, he gobbled it up.
I asked if he liked it and he said, “Oh yes, that was such a good dinner.”
My picky eater was put off by the looks of this dish but once he tried it he loved it.
We ate the leftovers for lunch the next day and they heated well in the microwave in about 90 seconds for three servings.
This taco quiche recipe is a quick and easy recipe great for dinner but also could be for breakfast too.

It’s Monday and time to make a plan for this week’s meals. If you aren’t sure what to make this week, take a peek at what’s cooking at our house this week. I’ve got the full plan and recipe links too below.
A couple of weeks ago I got a great deal on petite sirlion steaks. We’ll be eating those as brown sugar steaks this week. They are simple to make and so good either grilled or broiled.
We’ll also be enjoying pizza one night and burritos another. These are both easy dinners to make and everyone in our family loves them.
If you’ve not made pizza at home from scratch give this easy no rise pizza dough recipe a try as well as homemade pizza sauce too.
We have quite a bit of basil in our garden so I’ll make basil wraps this week. And to use up the vegetables in the crisper drawer we’ll be having stir fry.

Have you ever tried pear jam? It’s so good, I could eat it with a spoon. And this easy pear freezer jam recipe can give you the yummy flavor of fresh pears in a jam all winter long.

Simple and Easy Pear Freezer JamAs the gardening season wraps up the Tuesday in the Garden gardeners are sharing some of their recipes to keep your harvest for the winter.
Today I’m sharing this easy pear freezer jam. To see what the other gardeners are sharing go to the bottom of this article. I’m sure you won’t be disappointed.
I’ve made pear jam in the past. But I’ve only made the cooked pear jam that is canned. I thought why can’t you make pear freezer jam?
I looked at the recipes that come with my pectin and realized there is no pear freezer jam. But I thought it would turn out. So I tried it.
This pear freezer jam tastes just like sweetened fresh pears. It’s fantastic and so easy too. No cooking, well you have to boil the pectin in water, but other than that, no cooking.
No prepping jars or boiling water canners. Just freezer containers and a few items below…
Ingredients Needed to Make Pear Freezer JamPears
Sugar
Pectin
Lemon Juice
I like to stick with good canning pears for this recipe. Because some other pears might make the jam watery or not, let it quite set up well.
In this batch of pear jam, I used Bartlett pears. They are easy to come by. Great for canning, drying or eating. But also great for pear freezer jam.
Another one I’d try if you can’t get Bartlett pears is Anjou pears. These are also good, cooking and canning pears so I’m sure they would work out well in this pear jam recipe.
The one pear I’m not sure of is Asian pears. They can be a little watery when cook so I’m not sure they would hold up well in the pear jam. It would be best to use one of the other pears.

Be sure to Print the No-Cook Pear Freezer Jam Recipe,- 3 cups Pears, finely chopped
- 2 tablespoons Lemon Juice
- 1 box of Sure Jel Pectin
- ¾ cup Water
- 3½ cup Sugar
- Place your finely chopped pears into a large mixing bowl. Add the sugar and lemon juice and stir to moisten all the sugar. Set aside and stir a couple times during the next 10 minutes.
- While your pear sugar mixture is sitting place the water into a small saucepan.
- Once the 10 minutes is up, stir the pectin into the water and heat on high stirring constantly.
- Boil for 1 minute then remove from heat.
- Add the pectin mixture to the pear mixture and stir for about 3 minutes or until the sugar is dissolved.
- Put your pear jam into clean and sterilized freezer container. Leave a little space at the top for expansion when freezing.
- Place lids on top and let the containers sit at room temperature for 24 hours.
- After 24 hours, place in the refrigerator if you’ll be using your jam right away. Or into the freezer for longer storage.
Tips for Making Freezer Jam Recipes
Just a few tips I’ve found that makes this recipe or any freezer jam recipes turn out great each time.
The Pectin…
I’ve made many types of freezer jam with different brands of pectin. I’ve found that Sure Jel works the best. That’s why I recommend using it in this recipe.
I’ve had no trouble with my freezer jam setting when using Sure Jel but I’ve had very soft sets with other types of pectin.
Some other brands of pectin need corn syrup added to set correctly. So be sure to add that if you use a different brand of pectin.
Measuring Accurately…
You need to measure each item accurately. If you use less sugar, the jam may not turn out. If you’d like to have a lower sugar jam, try the low sugar Sure Jel it works great and you don’t have to use as much sugar.
If you use too many pears, it may be runny. Be sure to use measure the amounts needed carefully to ensure your jam turns out.
Stir, Stir, and Stir more…
After adding the pectin be sure to stir well to dissolve the sugar well. To test to see if the sugar has dissolved. Pull the spoon out of the jam and wipe the jam off the back of the spoon with your finger.
If there are only a few sugar crystals, you can feel then it’s mixed enough. If it still feels very grainy keep stirring.
I usually set my timer for 3 minutes and stir the whole time. By the time the timer goes off, the sugar is dissolved.
That’s my best tips for making pear freezer jam. It’s a quick and easy jam that you don’t need to can or cook and has a wonderful fresh pear flavor too.

Do you have your meal plan ready for this week? If not, take a peek at what’s cooking at our house this week to give you a few dinner ideas.
The weather is starting to turn more like fall but it’s still going to be nice weather so we’ll be grilling this week.
I’m going to make grilled pizza, hamburgers, steaks, and grilled pork chops. I’m not ready to give up grilling quite yet.
The rest of the week will be easy skillet dinners. They are so easy to make and you don’t end up with a bunch of dishes to wash later. Yay!
We’ll also be having stir fry this week to use up those vegetables that are hanging out in the crisper drawer before they go bad.
Most days for lunch we will have leftovers from the night before. But I do have items to make sandwiches and hot dogs if we don’t have enough leftovers this week.
Breakfast will be toast and eggs during the week. But on the weekend we’ll have pancakes and waffles for a change.
