We have come to the last menu plan for the year of 2018. I can’t believe tomorrow it will be the new year. If one of your goals for this year is to eat at home more often, meal planning can make that happen.

For this last menu plan for the year of 2018 we are sticking with comfort food.

 This week our menu plan has some great comfort foods I love to make.

We will be having a snack type lunch this week along with a snack type dinner on New Year’s Eve. A snack type lunch is something  my kids love to have once in a while. We fill a plate with lunchmeat, cheese, cracker, fruit slice and vegetable sticks.

My son has certain things that he has to have on his plate for our snack lunch. One of the items is a piece of bread with butter on top, cut into 4 squares. It’s so simple but he loves it so much.

Most mornings our breakfasts will be our usual, toast and eggs. But on the weekends, I like to make something a little special for my family.

This weekend it will be our standby favorite, pancakes and then omelets which is my husband’s favorite breakfast.

If you have picky eaters, let them help plan the meals, it gives them a little control and can help them not be so picky at meals.

Christmas is this week. I’ll be making two kinds of twice baked potatoes and ham for our Christmas dinner. Along with a batch of the yummy and easy to make quick dinner rolls.

We have lots of candy and cookies that I’ve made for dessert too.

We are having a snack dinner for tonight, Christmas Eve. It’s so easy to make. I love to have an easy to make dinner the night before Christmas, since I know I’ll be cooking a bunch on Christmas Day.

The rest of our menu is full of easy to make dinners. The pan fried pork chops are so easy to make. They turn out crisp and flavorful on the outside and juicy on the inside.

We love the sesame chicken recipe from Budget Bytes and we’ll be making that this week. 

And the garlic pork roast is fancy enough for the Christmas dinner but easy enough for even a busy weeknight meal.

Here’s what’s cooking at our house this week

Dinners

Start dinner in the slow cooker in the morning and have dinner waiting for you when you get home. This Garlic Pork Roast will cook all day and be ready just in time for dinner.

Snacky Dinner for Christmas Eve:  Beef Stick, Cheese, Crackers, Fruit, Vegetable Sticks and Pringles Chips (this is one item my son has to have on Christmas Eve)

In today’s Podcast I’m talking about new year goals and setting yourself up for success. So this year you can achieve those goals. I hope these tips I share today can help you make good progress on your new year goals.

Planning New Year Goals for Success

This year instead of resolutions let’s set new year goals and set yourself up for achieving and making progress on your goals.

What’s wrong with resolutions…

When we resolve to not do something, it always seems to backfire. When making resolutions we are telling ourselves we want to make changes but the word resolve seems so rigid. So final and without grace.

The word resolve can make you think you are going to have to fight and uphill battle to win. And while new year goals can be hard to achieve, let’s make it easier by forgetting the word resolve.
Because if you think you don’t have much resolve then you’ll be defeating yourself from the beginning.

Resolutions tend to fade away quickly…

When we make resolutions we work on them very hard for the first few weeks. But then we slip up and lose our resolve. Then by February you’ve almost forgotten what you set out this year to achieve.

But it doesn’t have to be that way…

The right goals can help to motivate you to achieve them.

How to Plan Good Goals Brainstorm

Brainstorm what you want to achieve this year. Write down everything. You won’t try to attempt all of these ideas just get them down on paper.

Walk away from your brainstormed goals list and let it sit a few days. Think about that list before you go to bed. Let you brain work on it while you are asleep. Yes this is really a thing.

Let those thoughts percolate in your brain and on your heart for a few days.

Then pick up your brainstormed sheet and look and see which goals are most important to you.

Circle them, highlight them. But keep your brainstorming list for later.

Pick Your Goals

Make a list of 3-10 goals you want to achieve this year. Limit them to these 3-10 for now.

As you achieve your goals you can look over your brainstormed list of goals again and add a new one. Better to start out with a few goals and add more as those goals are achieved.

Now it’s time to make our goal, good goals…

Be Specific with your Goals

Don’t say something like I want to lose weight and get healthy. A more specific way to state that goal would be I’m going to eat vegetables 3 times a day and cut out sweets except for one time a week. So I can get healthy and lose weight.

Set a Due Date

This might be harder but set a due date for when you will achieve this goals. Take our example of eating more vegetables and reducing sweets. Set a time when you’d like to be consistent with this goal at 80% of the time by.

Be realistic and give yourself at least 12 weeks.

Break Your Goals Into Steps

Continuing with our example, the first week you might eat vegetables one time a day. And eat sweets 5 times that week. The following week you’d increase vegetables to twice a day and reduce sweets to 3 times that week. If that week went well you’d adjust again.

Little progress and little steps over time makes for lasting changes.

Make a way to Track Your Goals

Write down your goals on paper. Having goals written down makes them more likely to be achieved, than ones you have in your brain or on your computer.

Make a sheet with your goals. Then write down your goal broken down by weekly tasks and even daily tasks if needed to help you achieve them.

Use a yearly goals sheet to write down the goals you want to achieve by the end of the year.

Use a month goal sheet to write down the steps you’ll take for the first month. Be sure to have a place where you can check off the tasks as you achieve them.

Use a weekly goal sheet to make a plan for each of the monthly tasks and break them down into small pieces to work on during the week.

Use a daily checklist for the tasks you need to complete that day to meet your weekly goal tasks.

Mark Your Progress

Be sure to show your work on paper. I used to hate that in math class.

But when you show your work or progress it helps to encourage you to keep going to achieve these goals you have set.

Do It All on Paper

Goals are hard to achieve, they are hard to stick to, but it’s been shown when you write your goals down you have a much better chance of achieving them.

Find a Support System

Choose someone or a few people to help keep you on track. It can be someone who can check in with you weekly or daily to see how things are going. Someone you can talk to when you hit a tough spot in achieving your goals.

One word of caution…

Make sure the person you choose is a person who can truly be happy for you and wants you to achieve your goals.

Some friends can have a hard time supporting a friend who is making changes they want to achieve and can actually whether it be intension or unintentional sabotage you.

Be sure to consider who you’ll get accountability help from.

It’s Monday, do you have your meal plan ready? If you need a few easy dinner ideas check out meal plan below. It’s full of easy to make meals.

We are getting so close to Christmas now. Do you know what you are having on Christmas for dinner? I’m not decided yet. I thinking either ham or roast beef or maybe even meatloaf.

The artichoke chicken casserole is so good. If you like artichokes you need to give it a try. We also love the southwest chicken skillet. It’s one my kids ask for often and the leftovers reheat well too. 

I need to decide soon so I can go shopping. 

This week’s menu is an easy menu plan. We will be having chicken from the freezer a few times and a favorite of our family tacos.

I like to get my menu fairly simple this time of year. It makes getting dinner on the table so much easier. No need to have to stress about dinner when there is so much more to do.

How this Cherry Pistachio Fudge Recipe is Different

Now I know you might think, foolproof, yeah right. 

You’ve tried to make fudge, and it didn’t set up. Or maybe it was so hard when you tried to cut it, it crumbled into a million pieces. 

I hear you. I’ve had traditionally made fudge turn out that way for me too.

That’s why this cherry pistachio fudge is so great, you don’t have to worry about getting it to the right temperature. It’s a frosting fudge recipe. 

Yummy Cherry Pistachio Fudge

What’s a Frosting Fudge Recipe?

Instead of boiling the sugar and milk together to the right temperature and then adding the chips, you skip that and use a can of frosting instead. 

There’s no candy thermometer, no watching to make sure you are at the right temperature. 

It’s a quick heat the chips, stir in the ingredients and let it set up. 

That’s it, so simple and easy. 

How to Make Cherry Pistachio Fudge

Even though this recipe is simple to make, it’s nice to see it made especially if you’ve had problems with fudge recipes in the past.

Tips for Making this Simple Fudge Recipe 

Cherry, Vanilla and Pistachio Fudge

Melting the Chips

When melting the chips microwave at 30-second intervals, then stir. Then microwave again for 30 seconds and repeat the process until the chips are melted and smooth.

If you microwave the chips too long without stirring, they can overheat and get grainy. Once that has happened there is no saving them. 

Trust me, I’ve tried. Take the time to microwave and stir. 

You can also you a pan on the stove top over low to medium low heat to melt the chips. 

Stir constantly to keep parts of the chips from overheating. Once all the chips are melted remove from the store and stir in the remaining ingredients. 

Prepare All the Ingredients First

This recipe sets up pretty quickly, making it perfect for a last minute dish to take to a party. But that can work against you too.

If you heat the chips and let them sit while you chop the cherries and pistachios, the fudge won’t mix well. 

The chips will harden. And then you will have a hard time mixing the other ingredients together. 

Instead prepare all the ingredients before you heat the chips. 

Take the frosting out of the can and place it into a bowl. This will eliminate the stress of trying to quickly get the frosting out. It’s much easier to scoop it out of a bowl than to pry it out of that can.

Once the frosting is in the bowl and out of the can chop the cherries and nuts.

I like to cut the dried cherries in half. I’ve run into big cherries when trying to cut the fudge and they don’t cut well. It’s better to cut them in half or if they are big into quarters before mixing them in.

The pistachios are hard to cut in the fudge; they tend to move instead of cutting. Instead of dealing with that, rough cut your pistachios before adding them. It makes it much easier to cut the set up fudge.

If you want thicker fudge pieces, use a 9-inch square baking dish. If you want thinner pieces of fudge, you can spread it thinner into a 9 by 13 inch pan to cool.

It all depends on if you like thicker smaller pieces of fudge or bigger thinner pieces. 

To Chill or Not to Chill

The fudge will set up sitting on the counter. 

But if you are in a hurry, read in you forgot you needed to bring something to a party, you can place the fudge in the refrigerator to help it set up more quickly. 

Storing the Fudge

You can store this fudge at room temperature or in the refrigerator. I find if it will be consumed quickly, room temperature in a covered container is good.

If you won’t be consuming it quickly store it in the refrigerator in a covered container is best. 

Cherry and Pistachio fudge

Ingredients
  • 1 can Vanilla or Cherry Frosting (I used vanilla)
  • 12 oz Vanilla Baking Chips
  • 1-2 drops of Cherry Candy Flavoring
  • ½ cup Dried Cherry, chopped
  • ½ cup Pistachios, chopped
Instructions
  1. In a microwave-safe bowl, microwave the vanilla chips for one minute and then stir. Repeat until the vanilla chips are melted and smooth.
  2. Stir in the frosting into the melted chips with the cherry candy flavoring.
  3. Then stir in the cherries and pistachios.
  4. Spread into a greased 9-inch square pan or 9 by 13-inch pan depending on the thickness you desire.
  5. Let cool until set.
  6. Once the fudge is set, cut into serving sized pieces and enjoy.

Christmas is coming, we’re only a couple of weeks away from the big day. Are you ready?

I’m working on making Christmas cookies and candy this week. Since I’ll be doing extra baking, our menu plan is fairly simple with easy to make meals.

I also be using the slow cooker a couple of times this week. I love how easy it is to make a meal in it.

We will be making a couple recipes from Budget Bytes this week.

The ham and bean soup looked so good. We made it a few times and it turns out great each time.

Mint and chocolate is a great combination in a sweet treat. And these easy to make peppermint brownie truffles are a great way to enjoy those two flavors together.

Plus, they are so easy to make if you can make brownies you can make these peppermint brownie truffles.

Easy Peppermint Brownie Truffles

These yummy minty truffles would make a great hostess gift or dessert to take to a holiday party.
You need not tell anyone how easy they are to make.

Enjoy the compliments from everyone who says how great your truffles are.

This recipe is close to the brownie truffles recipe. Except in one way, you need to add mint to it.

You can start with a homemade brownie recipe and add a few drops of peppermint flavoring when mixing in the wet ingredients.

Or you can use a box mix add the peppermint flavoring at the same time you add the other liquid ingredients.

Either way, they will turn out great.

How to Make Peppermint Brownie Truffles

You’ll need to bake your brownies. Mix the mix or make them from scratch.

But when you are adding the wet ingredients, add a little peppermint extract too.

If you are using a box mix, follow the directions for fudge like brownies instead of cake like brownies. They will roll together better and be more like a truffle.

Once you’ve baked the brownies, let them cool. Cut off the crisp edges, they don’t roll into truffles well.

But don’t throw them away, they are great to snack on and my favorite part of a brownie and maybe your favorite part too?!

After you roll the brownies into brownie balls, cool them down so they’ll be easier to dip.
You can freeze them for about 30 minutes or you can freeze them overnight. Whatever works best for you.

Once the brownie balls are nice and cold. It’s time to take them for a dip in yummy white chocolate.

Ok, you can use any kind of chocolate you like but the combination of white chocolate on the outside and yummy dark fudge mint brownie truffles on the inside is so good.

Melt the almond bark in the microwave at 30-second intervals. Stirring in between each interval until the almond bark is melted and smooth.

Roll those fudge mint brownie balls in the melted white chocolate until it fully covers them.
Let the excess chocolate drip off and return them to the lined cookie sheet. Add a dash of sprinkles and continue on with the next one until they are all done.

Let the chocolate fully harden and then store in an airtight container.

Peppermint Brownie Truffle Recipe Tips

Fully cool the brownies before rolling them. If they are warm, they might not hold their shape well at all.

Cut off the crisp edges, they won’t work well for the truffles.

You can add crushed peppermint candy canes or crushed peppermint hard candies to the batter before baking.

Or roll the brownie truffles balls in crushed peppermint candy before chilling. To add even more peppermint flavor.

Or you can stir in the crushed peppermint candy into the white chocolate before coating the brownie truffles. The coating won’t be as smooth but they will taste great.

When melting your almond bark don’t overheat it. Be sure to microwave and stir at regular intervals.

I know it’s tempting to set the microwave for 2 minutes and stir but…

If the almond bark is overheated, it will get grainy and be ruined.

Add the sprinkles to the peppermint brownie truffles right away after dipping. If you wait the chocolate could harden and they won’t stick.

Peppermint Brownie Truffles

Serves: about 40 Truffles
Ingredients
  • 1 Recipe or Box Mix Brownies
  • 12 oz White Chocolate Candy Coating
  • ½ tsp Peppermint Extract
  • Sprinkles (optional)
Instructions
  1. Prepare the brownies mixing in the peppermint extract with the other liquid ingredients.
  2. After baking the brownies and letting them cool, cut the crispy outer edges off the brownies.
  3. Cut the brownies into squares, I like to cut them into 1½ inch squares but if you like bigger truffles cut them bigger.
  4. Take each brownie square and roll it into a tight ball and set onto a wax paper lined cookie sheet.
  5. Once all the brownies are rolled into balls set them aside.
  6. Place the candy coating into a medium sized pan and heat over low heat, while stirring until the candy coating is smooth and melted.
  7. Dip each brownie ball into the candy coating and roll to coat well. Place back on the wax paper and sprinkle with the sprinkles if desired.
  8. Let set until the candy coating is firm.
  9. Enjoy!

It’s the start of a new month and it’s the start of a new week, time to get our meal plans ready.

This week we’ll be trying a new soup recipe. It sounds so good, I’ll have to let you know how it turns out. 

We’ll also be having tacos in bowls instead of the shell. It’s a nice change of pace for us if you haven’t given the taco bowl recipe a try, you should.

I’ve made the glazed pork chops a couple of times now and they are so good. They can be inexpensive too if you cut your own pork chops from a pork loin. It’s not hard to do at all.

When the cold weather sets in it’s time to eat soup, chili, and stews. They warm you up from the inside out. This week we are trying the new to us soup recipe and making skillet chili too. 

It’s a quick chili recipe for the busy day. 

Finally we’ll be having two chicken recipes, parmesan chicken and sweet chili chicken too.

A quick and easy dinner, taco bowls. These are made with ground beef and are quick to make. Just a few simple ingredients are all that is needed. They are a favorite at our house.

I don’t think you can ever have too many breakfast recipes. This chocolate chip scone recipe is one of our favorites. These chocolate chip sones have no heavy cream, in fact they are dairy free scones. Another plus is you can make them in the skillet, so you don’t have to heat up the house on warmer days to bake them.
